Linden, is a monofloral honey, harvested late spring and is a semi-set raw honey.

Linden is a monofloral honey that is harvested in late spring. It is produced from the blossom of the Linden tree, which is also known as 'lime tree' (not the same as the citrus fruit tree) Interestingly the leaves and especially the flowers, of this tree have been used for medicinal purposes for centuries; a perfect complement to honey! This honey has a slightly higher fructose content than other honeys and, as such, remains 'runny' for approximately 9 months from harvesting.
